In this episode, New Scandinavian Cooking visits Northern Zealand. Danish chef Claus Meyer prepares delicious dishes using local produce – particularly dairy products, fresh cheese and berries.

Experiences in Northern Zealand

Northern Zealand offers a great variety of experiences from small trade towns with specialty shops and artworks to royal castles, i.e. Fredensborg Castle, where the crown prince couple reside, Fredensborg Palace Gardens, which is one of Denmark’s best preserved baroque gardens, and Esrum Monastery which was founded as far back as 1151.

The long stretch of coast of Northern Zealand

Northern Zealand is famous for its long coastal stretches. Along the coast, you find small, cosy fishing harbours and lovely beaches that, among other things, are famous for good windsurfing conditions and beach volley. Behind the sand dunes and steep slopes of the coast, the landscape stretches with fertile fields, dried-out moor meadows, forests and nature reserves such as Tibirke Bakker (Tibirke Hills) that overlooks Denmark’s largest lake, Arresø, Roskilde Fjord and Grib Skov (Grib Forest).

Farm shops in Northern Zealand

There are farm shops all over the country, and they are a great source of experiences. Visit the shops, and meet the people behind the local produce.

Fuglebjerggaard – farm shop and pick-your-own

Experience the farm’s animals, gardens and fields. In the shop, you will find the farm’s own produce; meat, sausages, stone-ground flour, fruits and vegetables and plants. In the Brewery, produce from the farm is used to make unique beer from hops and malt. Everything is organic.

Højbogård

Is a farm shop that sells fresh lamb meat all through summer. Pop in and buy e.g. meat for the BBQ.

Hegnstrup organic farm

An organic farm selling fresh fruit, vegetables, flowers, eggs, lamb, pork and much more. Hegnstrup has a long list of delicious organic produce and among many other products you will find eight different kinds of cabbage.

Local taste experiences

Beer from Brøckhouse

The micro-brewery Brøckhouse is located in Hillerød. The micro-brewery has a set range of products, e.g. Esrum Kloster (Esrum Monastery) and Frederiksborg Slotsøl (Frederiksborg Castle) Beer. Furthermore, they make special beers for Christmas, Easter and the harvest season. The beer is served several places in Northern Zealand, but it is also found in large supermarkets.

Medieval specialities

In the monastery cellar of Esrum Monastery you find the restaurant Broder Rus´ Kælder (Brother Rus’ Cellar). Here, you can enjoy medieval inspired specialities, characterized by the use of game, spices, herbs, vegetables, nuts, honey and fruits. You should also taste the monastery beer which is produced in co-operation with the local brewery “Brøckhouse". During summer, food can be served in the beautiful cobbled monastery yard.
